Categories and filters matter more as your catalog grows past 30 or so products. Group logically (by type, by price range, by occasion) and make sure your search box actually works, matching partial words and common misspellings, not just exact matches. A customer who can't find what they're looking for in under a minute usually leaves rather than keeps hunting.
